La Croix Blanche AOPC Champagne
At the heart of France's famous Champagne region lies Épernay, a vibrant town and the beating heart of Champagne production. The Avenue de Champagne, home to the most renowned Champagne houses, winds elegantly through Épernay. Due to its historical and economic significance, it was named a UNESCO World Heritage Site in 2015.
The vineyard sites of the Côte des Blancs, famous for their Chardonnay, give the Champagne its outstanding quality. The chalk and limestone soils offer a unique terroir and make Jean Gimonnet's Champagnes something truly special. The vines of Jean Gimonnet, a proud 40 years old, stand on plots classified as 1er Cru. However, like many great Champagne houses, Jean Gimonnet rejects the 1er and Grand Cru classification, as it is not awarded to the estate, as in Bordeaux, or to the single vineyard, as in Burgundy, but to an entire village. Cuis holds the 1er Cru classification.
At harvest, the grapes are picked by hand and gently pressed using a modern pneumatic press. The must then ferments for three weeks in stainless steel tanks. The young wine is then allowed to mature for six months in new oak barrels. Over the following months, each bottle is turned a quarter-turn daily in the Champagne house's chalk cellars and repositioned more vertically every two months.
The Champagne presents itself golden yellow and very classic in style. On the nose, it reveals a certain maturity with aromas of cooked fruit, flowers, mushrooms and hazelnut biscuits, showing complexity and maturity. On the palate, it is lively with a clear acidity, harmonious and energetic, accompanied by a delicate texture. The finish is fresh and long-lasting. An absolute masterpiece with an unsurpassed aromatic profile.
