The grapes come from selected vineyards in Puglia, which are harvested overripe once they have partially dried on the vine, in order to achieve maximum full ripeness, which is then reflected in a higher sugar and alcohol content. After the grapes are cut from the shoots, they are left to dry (appassimento on vines) among the vine leaves for 15 days. During this process, they lose up to 50% of their water content. This results, similar to the great Amarone, in the characteristic notes of ripe fruit, such as plums and raisins. Three months of ageing in oak barrels gives it the final touch.
Characteristics
This wine shimmers ruby red in the glass, with dark, garnet-red reflections. The complex aromas of red fruit, plums, sultanas and spices make this velvety, full-bodied wine, with its harmonious tannins, an absolute taste sensation! Ageing in oak barrels gives it a pleasant note of chocolate and delicate spices.
