Ripasso Classico Superiore DOP Valpolicella
«A robust yet soft red wine that is ideal with meat dishes or with mature, full-flavoured cheeses. It also pairs very well with pasta (tagliatelle) or porcini mushroom risotto.»Serving suggestion, Pieroth catalogue
Valpolicella is one of the most beautiful areas of the Veneto, north-west of Verona and east of Lake Garda, between Soave and Bardolino. Within this growing area lies the “Valpolicella Classico” zone, the core district from which the finer wines come.
Ripasso literally means “to do something again” – a clear reference to the wine's production method. The finest quality Valpolicella is vinified as usual and stored in stainless steel tanks until February, when the dried Amarone grapes are pressed. The Ripasso's must then spends a few weeks on the Amarone's pomace to gain body, soft tannins, finesse and harmony. Ripasso is thus rightly called “the little brother of Amarone”.
Characteristics
It is not as heavy or high in alcohol as its big brother, yet still intense, harmonious, full-bodied and noble. Its intense ruby-red colour and complex aromas of red fruit and spice make this velvety, full-bodied wine, with its harmonious tannins, a genuine taste sensation!
Serving suggestion
