Governo all'uso Toscano
Wine description
Sangiovese was already known to the Etruscans and is today “the” red Italian grape variety. It is perfectly suited to the geographical and climatic conditions of central Italy. Sangiovese ripens late, and its typical aroma is reminiscent of black cherry. After a strict selection, part of the grapes are dried by hand for around 3–4 weeks. After pressing, this must is added to the wine that has already fermented, triggering a second fermentation (Governo All'Uso Toscano). This causes a slight increase in alcohol content and, through the sweetness of the extract, produces a unique flavour.
Aromas:
Plum, pepper, cherry, wood
