After the grape clusters are cut from the shoots, they are left among the vine leaves to dry (appassimento on vines) for around 20 days. During this process, they lose up to 50% of their water content. This produces, much as with the great Amarone, the characteristic notes of ripe fruit such as plums and raisins.
