It is perfectly suited to the geographical and climatic conditions of central Italy. Sangiovese ripens late, and its typical aroma is reminiscent of black cherry. After a strict selection, part of the grapes are dried by hand for around 3–4 weeks. After pressing, this must is added to the wine that has already fermented, triggering a second fermentation (Governo All'Uso Toscano).
